Entree: Tacos with all the fixings (lettuce, tomato, sour cream, cheese, avocado)

Sides: Refried beans, cheesy Mexican rice (found this Old El Paso rice at Target)

Dessert: N/A

We purchase an Old El Paso taco kit that includes both crunchy and soft tortillas. For this theme night, I purchased plastic margarita glasses, a banner and cactus-themed plates at napkins at Target. Ronan really liked the salt-rimmed virgin margaritas as you can tell from the photo. It was a lot of fun to have Taco Tuesday fall on Cinco de Mayo this year!
