Entree: Teriyaki-pineapple chicken over brown rice
Side: Macaroni salad (purchased from our favorite local Hawaiian restaurant, Wakikikie Hawaiian BBQ). I have tried to make mac salad that tastes this good, to no avail.
Dessert: Haupia (Hawaiian coconut pudding)
The Lava Flow drinks were a twofer because they are very sweet and served as our dessert as well. We enjoy a similar drink poolside when visiting Walt Disney World. I jazzed ours up a bit by dyeing sugar with red food coloring.
For the chicken, I marinated boneless, skinless chicken breasts in teriyaki sauce mixed with the pineapple juice from a large can of pineapple chunks. The preparation was simple - I just grilled it (indoors) and even grilled some of the pineapple.
The coconut pudding was delicious, but the kid wasn't a fan of the texture.
The green-striped paper straws, tropical vibes napkins, and floral, surfboard-shaped serving platter were purchased at Dollar Tree - a good deal all around.
